  • Rice Cereal – always use fresh rice cereal.
  • Marshmallows – always use fresh marshmallows, not that old abandoned bag sitting in the back of the pantry.
  • Butter – unsalted butter.
  • Vanilla Extract – a little bit of vanilla goes a long way. It helps elevate them beyond simple cereal desserts.
  • Condensed Milk – this is your secret weapon to make your treats extra gooey, rich, and hard to stop eating.
  • Salt – believe it or not, a pinch of salt actually makes sweets taste sweeter.

How to Make Gooey Rice Krispie Treats

Prepare a 9×13-inch pan by spraying it with butter cooking spray. Set aside.

In a large pot over medium heat, melt the butter and salt. Use a rubber spatula to spread the butter up the sides to prevent the mixture from sticking.

Add the sweetened condensed milk to the melted butter and stir to combine.

Add 12 ounces of mini marshmallows. Stir over medium heat until fully melted. Then remove from the heat.

Add 1 teaspoon of vanilla and stir everything together.

Fold in the Rice Krispies cereal and the remaining 2 ounces of mini marshmallows until evenly coated.

Transfer the mixture to the prepared pan and gently press into an even layer. Avoid packing the treats too firmly.

Let cool for 1 hour before cutting into 16 squares.

Top Tip

To keep the treats soft and gooey, never press them too firmly in the pan. Only press them in lightly.

Also, don’t overcook the marshmallow mixture as this can make the treats hard.

Storage

Store the treats in an airtight container or they will end soft and mushy (I’ve done this several times). They will stay fresh when kept like this for up to 3 days.

You can freeze treats if you want to store them longer. Wrap individual treats in plastic, then place them in a freezer bag and keep in the freezer for up to 2 months.

You likely added too many marshmallows or not enough cereal. Also, they may not have had enough time to cool and set. Allow them to rest for an hour before cutting and serving.

These gooey treats are best for the first 2 days although they’ll still be good on the 3rd day. Always store in an airtight container.

Since these treats are extra gooey, the knife will get sticky and the treats will stick to the knife. We like to grease the knife before cutting, then wipe clean between cuts, and regrease for clean cuts.
