  • Perfect last-minute option because you probably have all the ingredients in your kitchen.

Ingredients

Ingredients for Frankenstein Rice Krispie treats arranged on a countertop.
  • Rice Cereal – use fresh cereal.
  • Marshmallows – mini marshmallows because they melt faster.
  • Butter – unsalted butter.
  • Vanilla Extract – we’ve tried real and imitation vanilla extract and recommend the real stuff. It adds a baker level quality.
  • Salt – a pinch of salt makes them taste just a little sweeter.
  • Green Frosting – we made homemade vanilla frosting with green food coloring. You could also use store-bought vanilla frosting.
  • Brown or Black Frosting – for ease, we used store-bought chocolate frosting to make the face, stitches, and hair.
  • Brown or Black Sprinkles – for the hair.
  • M&M’s – for the eyes.
  • Pretzels – for the bolts.

How to Make Frankenstein Rice Krispie Treats

Lightly spray a 9×13-inch pan with nonstick spray and set aside.

In a large pot over low heat, melt the butter and dissolve the salt.

Add the mini marshmallows and stir until completely melted and smooth. Remove from the heat.

Stir in the vanilla extract. Then fold in the Rice Krispies until evenly coated.

Mixing Rice Krispies into the melted marshmallow mixture.

Transfer the mixture to the prepared pan. Use lightly buttered or damp hands to gently press the treats into an even layer. Don’t compact them, or the bars will turn dense.

Let cool for 1 hour, then cut into 16 squares.

Spread a smooth layer of green frosting over the front of each Rice Krispie treat, leaving a small strip at the top for the hair.

Refrigerate for 10–15 minutes, or until the frosting is set, before serving or packaging.

Top Tips

Add the sprinkles immediately after adding the hair for the frosting. Otherwise the frosting will set and the sprinkles will not set.

When drawing on the stitches, I found it better to lightly drag the frosting tip through the initial line of frosting. They tend to turn out better this way.

Storage

You can store these Frankenstein Rice Krispie Treats in an airtight container for up to 3 days.

FAQ

Can I make Frankenstein Rice Krispie treats in advance?

Sure. You can do it a couple of ways. First, you could make the treat base and store them in an airtight container for a few days, then decorate later. Or you could decorate them completely and store them in an airtight container.

Can I use store-bought frosting?

Yes! Store-bought frosting is a shortcut that will save you some time. But homemade frosting tastes way better, in my opinion.

Why are my treats hard?

There are two reasons for this. You either overheated the marshmallow mixture or you pressed the treats mix too firmly into the pan.
