Why You’ll Love Smores Rice Crispy Treats
- Did you grow up eating s’mores? Of course you did. These treats taste just as delish as the real thing, only you don’t have to build a fire or swat mosquitoes.
- You can whip them up in like 10 minutes. Think about that. In just 10 minutes, you can make a treat that will take you back to the most fun times of childhood.
- One of the reasons Rice Krispies treats are so beloved is that they have the perfect mix of crunchy and gooey texture. These are no different. Well…except you also get more fluffy marshmallows, chocolate, and graham crackers.

Ingredients

- Rice Cereal – we’ve used both the national and generic brands. The results are similar.
- Marshmallows – use mini marshmallows because the melt faster.
- Graham Crackers
- Chocolate Bars
- Chocolate Chips – we like semi-sweet, but dark or milk chocolate chips work too.
- Butter – unsalted butter.
- Vanilla Extract – adds a professional baker-quality touch. We’ve tried them with and without vanilla and it definitely makes a difference.
- Salt – a pinch of salt makes them taste just a little sweeter. That’s a good thing!

How to Make Smores Rice Crispy Treats
Prepare a 9×13-inch pan by spraying it with butter cooking spray. Set aside.
In a large pot over medium heat, melt the butter and salt. Use a rubber spatula to spread the butter up the sides to prevent the mixture from sticking.
Add 12 ounces of mini marshmallows. Stir over medium heat until the mixture is completely melted. Then remove from the heat.

Stir in the vanilla extract until well combined.
Add the 6 cups of Rice Krispies cereal and stir with a rubber spatula. Then add ¾ of the broken graham cracker pieces, chocolate chips, and the remaining marshmallows. Stir to combine.

Pour the mixture into the prepared 9×13-inch pan. Add the remaining graham cracker pieces and Hershey pieces on top. Wet your hands, shake off the excess water, and use your hands to gently press the Rice Krispies into the pan. Don’t press them down too hard, or they’ll be hard to bite into! Let the treats cool at room temperature for an hour.

Using the rubber spatula, remove the treats from the pan. Use a knife to cut them into squares and enjoy!
Top Tip
There are a few things that can make or break your s’mores rice krispies treats.
I know you’ll want to make them as quickly as possible, but melt the marshmallow mixture low and slow or else you’ll end up with sad little cereal bricks.
Fold the graham cracker pieces in gently. Don’t mix it aggressively or they’ll turn to dust.
Press the mixture into the pan gently.
To easily slice through the treats, rinse the knife in hot water. (dry it before using)
Storage
Place leftover treats in an airtight container and store at room temperature for up to 3 days. This way, they’ll stay soft and chewy. Does your kitchen get a little hot? Storing in the fridge is cool too. Just allow them to sit out for a few minutes before serving.
Rice Krispies Treats freeze amazingly. Once you slice them, wrap each one individually in plastic wrap and place them in a freezer bag. Store like this for up to 2 months. We do this all the time.

Sure. We do this all the time. Just wrap them individually in plastic wrap them place them in a freezer bag. They keep for up to 2 months.
Ugh..I hate it when that happens! When this happens, it’s usually one of a few things. You either overheated the marshmallow mixture, or you pressed the Rice Krispies treats mixture into the pan too much.
Nope! And that’s yet another reason to love treats. Just place them in a covered container and they’ll last for up to 3 days on the counter.
