Crispy treats are the perfect easy dessert. The base recipe requires just a few ingredients, most of which you likely have in your kitchen cabinets. And honestly, they’re isn’t a time of year, occasion, or special event they wouldn’t work for. Yes, you can even elevate them for graduations, baby showers, and wedding showers.

Why You’ll Love Chocolate Covered Rice Krispie Treats
- Dipping treats in chocolate is a simple upgrade over classic treats (our recipe is the best, just sayin :). They go from AMAZING to “I’ll pay you to make them for me.”
- They’re still ridiculously easy to whip up. For the base, all you need is butter, rice cereal, marshmallows, vanilla extract, our special ingredient, plus chocolate chips and oil for dipping. Most of which are likely already in your kitchen, and they take just 15 minutes to make.
- They will satisfy all crowds. I mean, seriously, have you ever met someone who didn’t like a good crispy treat? Yea, me either. And honestly, I don’t think I could be friends them anyway. >:))
- They freeze well. That means you can make batches in advance ahead of a special event. Or, like us have them ready the kid comes home from college.
Ingredients

- Rice Cereal – we’ve used both the national and generic brands. The results are similar.
- Marshmallows – use mini marshmallows because the melt faster.
- Chocolate Chips – we like semi-sweet, but dark or milk chocolate chips work too.
- Oil – for melting chocolate chips. We use vegetable or coconut oil.
- Butter – unsalted butter.
- Vanilla Extract – adds a professional baker-quality touch. We’ve tried them with and without vanilla and it definitely makes a difference.
- Condensed Milk – the secret ingredient for extra rich and gooey gourmet treats.
- Salt – a pinch of salt makes them taste just a little sweeter. That’s a good thing!

How to Make Chocolate Covered Rice Krispie Treats
Prepare a 9×13-inch pan by spraying it with butter cooking spray. Set aside.
In a large pot over medium heat, melt the butter and add salt. Use a rubber spatula to spread the butter up the sides to prevent the mixture from sticking.

Add the sweetened condensed milk to the melted butter and stir until well combined.
Add the 12 ounces of mini marshmallows. Stir over medium heat until the mixture is completely melted. Then remove from the heat.

Add the vanilla extract and stir until well combined.
Add the 7 cups of Rice Krispies cereal. Use the rubber spatula to stir it all together.

Pour the mixture into the prepared 9×13-inch pan. Wet your hands, shake off the excess water, and use your hands to gently press the Rice Krispies into the pan. Don’t press them down too hard, or they’ll be hard to bite into! Let the treats cool at room temperature for an hour.

Using the rubber spatula, remove the treats from the pan. Use a knife to cut them into squares.
Melt the chocolate chips and shortening in the microwave in 20 intervals, stirring after each interval, until the chocolate is completely melted. Pour into a wide, tall glass. This will help when dipping.

Take the Krispie Treats and dip them into the melted chocolate about halfway. Place on a parchment-lined baking sheet. Allow the chocolate to set. Enjoy!

Top Tip
Okay, so I know treats are super easy to make, BUT, they’re also super easy to fudge. So here’s how to avoid common mistakes and ensure your treats are soft and gooey with that classic crunch.
Don’t overheat the marshmallow mixture. Use low heat, and stir just until the marshmallows are melted.
When pressing the treats mixture into the pan, don’t press too hard, this will cause your treats to be harder than lego bricks. You don’t want that. Rice Krispie shouldn’t need a warning label. >:))
Always use fresh ingredients. So, you know that old stale bag of marshmallows in your pantry…yeah, don’t use that.
Storage
You can place leftover treats in a snap-lid container and they’ll stay soft and chewy for a few days.
For longer storage, wrap them individually in plastic wrap, and place them in a freezer-safe bag or container. They’ll be good to go for a few months.

As the melted chocolate sits, it begins to thicken. So warm it for a few seconds in the microwave. If it is too thick immediately after melting the chocolate, you may need to add a bit more oil to thin it out.
