These Key Lime Pie Pops are gourmet popsicles that are more like dessert than your average ice pop. With heavy cream, real key lime juice, and a buttery graham cracker crust, they actually taste like a slice of key lime pie in frozen form (you seriously won’t even believe it).
They’re incredibly creamy with that punchy citrusy flavor you can only get from real key lime juice. They’re refreshing, dreamy, and maybe, just maybe…the best thing since sliced bread (we’ll have to take a vote).

They’re great for Memorial Day (as it’s the unofficial start of summer) through the whole warm weather season. You’ll want to make them for every celebration or even as a weekly treat.

How to Make Key Lime Pie Popsicles
In a large mixing bowl, combine the heavy cream, whole milk, sugar, salt, sweetened condensed milk, key lime juice, and lime zest.

Whisk until the sugar is fully dissolved and the mixture is smooth and creamy.

Add a small spoonful of graham cracker crumble to the bottom of each popsicle mold.
Pour the key lime mixture into the molds, leaving a little room at the top for expansion.

Add another light layer of graham cracker crumble near the top of each popsicle and gently swirl with a popsicle stick or knife if desired.
Insert the popsicle sticks and freeze for 5–6 hours, or until completely solid.
To release the popsicles, run the molds under warm water for a few seconds, then gently pull them out.
Garnish with extra lime zest and additional graham cracker crumble before serving if desired.
Top Tip
When adding the graham cracker crust, add just a teaspoon at a time. Otherwise crack apart to remove them from the mold.
Storage
Keep them in freezer-safe containers or bags for up to a month.
