  • Fresh or Frozen Strawberries – If you have fresh strawberries, great! But frozen strawberries are just as good, if not better, since they’re picked at their peak ripeness. They’ll give you that juicy, sweet flavor every time.
  • Freeze-Dried Strawberries – They add a bold, concentrated strawberry flavor.
  • Cream – We added heavy cream because it gives the popsicles a melt-in-your-mouth texture and adds a touch of indulgence to the fruity flavor.
  • Sugar – It sweetens the pops and keeps them from freezing too hard, so they’re softer and easier to eat. Plus, we use simple syrup instead of plain sugar to ensure a smooth texture without any grittiness.

How to Make the Best Strawberry Popsicles

Add the sugar and water to a small sauce pan. Heat until the sugar has dissolved. About 2-3 minutes.

Add all the ingredients to a food processor and blend until almost smooth.

Pour the mixture into the molds. Place the lid on the popsicle mold and add the sticks. Place in the freezer for about 4 hours.

Remove all popsicles from mold, wrap them in plastic wrap individually or serve immediately. Enjoy!

Top Tip

Removing popsicles from molds can take a little finesse. Let them sit on the counter for a few minutes or run the molds under cold water to loosen them up.

Avoid using warm or hot water, as it can melt the popsicles too quickly. It’s also a good idea to pop all of them out at once to skip the hassle of thawing and refreezing.

Equipment

We have all kinds of popsicle molds, some with fun shapes and others that are more practical. It really comes down to what you prefer!

Storage

To store popsicles, take them out of the molds and wrap each one in plastic wrap or parchment paper to keep them from sticking.

Then, place them in an airtight container or freezer bag and store in the freezer for up to a month for the best flavor and texture.

Typically, popsicles take about 4 to 6 hours to fully freeze, but for the best results, leave them overnight.

What if I don’t have popsicle molds?

No problem. You can use small cups, ice cube trays, or silicone molds and insert toothpicks once partially frozen. It’s the way it was done when I was a kid.

  • 16 Oz Frozen Strawberries
  • ⅓ Cup Granulated Sugar
  • 2 Tbsp Water
  • ½ Oz Freeze-Dried Strawberries
  • ¼ Cup Heavy Cream

Instructions
 

  • Add the sugar and water to a small sauce pan. Heat until the sugar has dissolved. About 2-3 minutes.
  • Add all the ingredients to a food processor and blend until smooth.
  • Pour the mixture into the molds. Place the lid on the popsicle mold and add the sticks. Place in the freezer for about 4 hours.
  • Remove all popsicles from mold, wrap them in plastic wrap individually or serve immediately. Enjoy!

Notes

  • We liked having some texture and didn’t blend until completely smooth. But if you want a completely smooth mixture just continue to blend until desired consistency. 
  • Run the popsicle mold under cold water to remove from mold more easily.
  • These will last in the freezer for up to 2 months.
  • This recipe can easily be doubled.
