Ingredients

- Rice Cereal – we use fresh name-brand rice cereal, as we’ve found generic cereal tends to be a bit more crumbly.
- Cake Mix – we use yellow cake mix for that buttery authentic flavor.
- Marshmallows – always use fresh marshmallows (mini marshmallows melt faster than larger ones)
- Butter – unsalted is great because it allows you to control the amount of salt in your treats.
- Frosting – For this recipe, we went with store-bought vanilla frosting, but if you have your own recipe, use it.
- Sprinkles – classic rainbow sprinkles, aka Jimmies.
- Vanilla extract – enhances the buttery birthday cake flavor.
- Salt – makes the flavors pop.

How to Make Birthday Cake Rice Crispy Treats
Spread the cake mix on a baking sheet and bake at 350°F for 5 minutes. Let cool completely.

Lightly spray a 9×9-inch pan with nonstick spray and set aside.
In a large pot over low heat, melt the butter and salt. Add 10 oz of the marshmallows and stir until completely melted and smooth.
Remove from the heat and stir in the vanilla and cooled cake mix until fully combined.
Fold in the Rice Krispies until evenly coated.

Stir in the remaining marshmallows and sprinkles.

Transfer the mixture to the prepared pan. Use lightly buttered or damp hands to gently press the treats into an even layer. Don’t compact them or the bars will turn dense.

Let it sit for 1 hour before cutting into squares.
Pipe the frosting on each square and add additional sprinkles. Enjoy!
Top Tip
To avoid your treats getting too hard, don’t overheat the marshmallow mixture or press the cereal mixture too firmly into the pan.
The sprinkles will melt some when you add them to the warm treats mixture. This is normal. To avoid the colors mixing too much, wait to add the sprinkles last.
Storage
Store your new favorite birthday cake crispies in an airtight bag or food storage container. They’ll stay fresh for up to 3 days.
Freeze them if you want longer storage. First wrap them individually, then place them in a freezer-safe zipper bag or container.

I know it’s hard to believe, but yes, they really do taste like birthday cake. It’s the combination of butter, cake mix, and sprinkles that makes every bite feel like a forkful of your favorite cake.
Although these aren’t our gooiest treats like our condensed milk treats or fruity pebbles treats, they shouldn’t be too firm. This happens for a few reasons. You may have accidentally overheated the marshmallows, or you pressed the treats too firmly in the pan.
Yes, that’s what we did. Raw cake mix can contain bacteria, so we bake it at 350 degrees for 5 minutes before adding it to the treats.
