These Sugar Cookie Rice Krispie Treats are kind of perfect if you’re looking for a fun, simple, and kid-friendly treat for Christmas. You have all the same ingredients as normal treats but we add in sugar cookie mix (heat treated of course) and lots of green and red holiday sprinkles.

For our Christmas celebrations, we have our go-to favorites, you know chocolate chip cookies, sugar cookies with royal frosting and all, but we like to mix it up with fun treats like this. It’s the kind of thing people will say “wow, it really does taste like a sugar cookie.”

  • Rice Cereal – Always use fresh rice cereal. Just say no to that old stuff you have hiding in the cabinet. 😂
  • Marshmallows – Always use fresh marshmallows. We prefer minis because they melt faster and more evenly.
  • Cookie Mix – Sugar cookie mix gives the cookies that subtle yet recognizable flavor.
  • Sprinkles – Red and green Jimmy sprinkles make these treats festive which is perfect for Christmas. Blue and white is also a great Christmas color combination.
  • Butter – Unsalted better allows you to control the amount of salt in the treats.
  • Vanilla Extract – For a baker quality treat, adding a bit of vanilla extract makes them taste like something a little more elevated than a simple lunch box snack.
  • Salt – Brings all the flavors together. Just a pinch does the job.

How to Make Sugar Cookie Rice Krispie Treats

Spread the sugar cookie mix on a baking sheet and bake at 350°F for 5 minutes. Let cool completely.

Lightly spray a 9×13-inch pan with nonstick spray and set aside.

In a large pot over low heat, melt the butter and salt. Add 14 oz of the marshmallows and stir until completely melted and smooth.

Remove from the heat and stir in the vanilla and cooled cookie mix until fully combined.

Fold in the Rice Krispies until evenly coated.

Let the mixture cool for 1 minute, add the remaining 2 oz marshmallows, and gently fold in the sprinkles.

Transfer the mixture to the prepared pan. Use lightly buttered or damp hands to gently press the treats into an even layer. Don’t compact them, or the bars will turn dense.

Top Tip

Be careful not to overheat the marshmallow mixture or press the treats too firmly into the pan. Doing so can make the treats hard.

Storage

Store your new favorite Christmas treats in an airtight container at room temperature for up to 3 days. If stacking, use parchment or wax paper between layers or they will stick together.

These treats are great to make in advance and freeze for up to 2 months. First, cut and wrap each treat individually, then place them in a freezer bag.

FAQ

Do I have to heat treat the cookie mix?

Yes. But don’t worry, it’s really easy (takes just minutes) to do and it ensures the treats are safe to eat.

Can I use a different flavor cookie mix?

So we only tested this recipe with sugar cookie mix, but other cookie mix flavors should work too. You can try chocolate chip, snickerdoodle, or even white chocolate chip cookie mix.

Why did my treats come out hard?

Ahh, don’t worry. This happens for a few reasons. Number one, you may have overheated the marshmallow mixture. Or you may have pressed the treats too hard into the pan. Next time, you’ll want to heat the mixture slowly and press the treats gently in the pan.
