Ingredients

- Rice Cereal – big brand or generic will work.
- Butter – unsalted.
- Vanilla Extract –
- Protein Powder – we prefer unflavored or vanilla.
- Marshmallows – mini marshmallows melt faster.
- Salt – kosher or sea salt is best.

How to Make Protein Rice Crispy Treats
Prepare a 9×13-inch pan by spraying it with butter cooking spray. Set aside.
In a large pot over medium heat, melt the butter and add salt. Use a rubber spatula to spread the butter up the sides to prevent the mixture from sticking.
Add the mini marshmallows and stir over medium heat until completely melted. Remove from the heat and add the protein powder. Stir until completely mixed in.


Stir in the vanilla extract.
Add the 7 cups of Rice Krispies cereal. Use the rubber spatula to stir it all together.

Pour the mixture into the prepared 9×13-inch pan. Wet your hands, shake off the excess water, and use your hands to gently press the Rice Krispies into the pan. Don’t press them down too hard, or they’ll be hard to bite into! Let the treats cool at room temperature for an hour.

Using the rubber spatula, remove the treats from the pan. Use a knife to cut them into squares and enjoy!
How to Store
For easy storage, place the balls in an airtight container in the fridge for up to a week. Or you can do what we like to do and make a bunch of them and freeze.
To freeze them, you’ll want to place them on a parchment-lined cookie sheet and freeze until firm, then transfer to a zipper freezer bag or freezer-safe container.
Top Tips
Keep the temp low and melt the butter and marshmallows slowly.
Use a light hand when pressing the mixture into the pan. If you press too hard you’ll end with hard rice Krispies blocks.
FAQ
Some say different kinds or brands of protein will behave differently in the mix. But I say don’t worry about all that. Choose your favorite protein powder and enjoy.
We did not test this recipe without marshmallows, so I don’t know how swaps will work.
Not really. While you may taste a slight grittiness from the protein powder, it won’t be overwhelming. There’s a good reason for that. We didn’t try to overload them with protein, just enough to be a nice, delicious, and energizing snack.
In a covered container on the counter, they’ll last for up to 3 days. In the fridge, they’ll last up to a week. And in the freezer, they’ll last for up to 2 months.
