Why You’ll Love This Recipe

  • Most importantly these taste amazing! Mmmm…you have that mix of sweet, smokiness combined with crisp, crunchy coleslaw.
  • These sliders are sooo easy to make they’re nearly fail proof. They’re aren’t any fancy ingredients, just stuff like rotisserie chicken (or leftover bbq chicken), cheese, and Hawaiian rolls.
  • This might just be me, but I’m not the biggest fan of big ole sandwiches. There’s just too much so it becomes kind of unwieldy.
  • hese BBQ chicken sliders are a certified crowd-pleaser because what’s not to love about them. So they work for family dinners, pot lucks, and especially game days.

Ingredients

Ingredients for BBQ chicken sliders arranged on a table, including rolls, chicken, BBQ sauce, and cheese.
  • Shredded chicken – We like to use leftover rotisserie chicken but you can use whichever leftover chicken you have in the fridge. Yes, chicken thighs, legs, or breasts work well.
  • Dinner Rolls – we love Hawaiian rolls.
  • BBQ Sauce – just use your favorite.
  • Shredded Cheese – we like a combination of cheddar and Monterey Jack for that stretchy cheese effect.
  • Butter – unsalted.
  • Red Onion
  • Garlic Salt
  • Dried Parsley

Herb butter brushed over the tops of BBQ chicken sliders filled with cheese and onions.

Cover with foil and bake the BBQ chicken sliders until the cheese is melted and the tops are golden, about 10 to 12 minutes.

Carefully slice the rolls with a serrated knife, and serve warm with some extra BBQ sauce on the side. Enjoy!

Storage

I’m not the biggest fan of leftover sliders in general because the bread tends to be soft and soggy. If you do keep the leftovers, store the bread and BBQ chicken mixture separately.
