Buffalo Chicken Sliders are the game day or weeknight meal you need in your back pocket. With simple ingredients like rotisserie chicken, shredded cheese, dinner rolls, and buffalo sauces, they’re easy to make and so, so tasty! Mmmm!

They’re like buffalo chicken wings in sandwich form. And yes, your fingers will still get messy. But isn’t that part of the fun? 😊

  • Shredded chicken – We like to use leftover rotisserie chicken but you can use whichever leftover chicken you have in the fridge. Yes, chicken thighs, legs, or breasts work well.
  • Buffalo Sauce – you can use prepared buffalo sauce or combine hot sauce and butter and make your own.
  • Shredded Cheese – we like a combination of cheddar and Monterey Jack for that stretchy cheese effect.
  • Butter – unsalted
  • Ranch Dressing
  • Garlic Salt
  • Italian Seasoning

How to make Buffalo Chicken Sliders

Preheat to 350 degrees.

Slice the rolls in half horizontally. Don’t pull them apart. Place the bottom half in the center of a baking sheet.

In a mixing bowl, combine the chicken, Buffalo sauce, ranch dressing, and ½ cup each of the cheddar and Monterey cheeses.

Spread the buffalo chicken mixture evenly over the bottom half of the rolls. Sprinkle the remaining cheeses evenly over the top.

Place the top rolls over the chicken. In a small bowl, combine the melted butter, Italian seasoning, and garlic salt, then brush liberally over the top of the rolls.

Cover with foil and bake the buffalo chicken sliders until the cheese is melted and the tops are golden, about 10 to 12 minutes. Carefully slice the rolls with a serrated knife, and serve warm.

Storage

You could store leftovers, but between the buffalo chicken mix and the coleslaw, the bread will be a bit soggy. If you do store them, I would separate the filling from the bread. Then reheat the mixture and bread separately and reassemble.

We like a combination of Monterey Jack and Cheddar cheeses for this recipe. You can try Pepper Jack, mozzarella, or even provolone for these sliders.

Can I make it spicier?

  • Store in an air- tight container in the fridge for up to 3 days.
  • For reheating, cover with foil and bake at 350 degrees for 5-10 mins.
