  • Mmmm! Kielbasa, Peppers, and Onions is so sweet and savory, I can almost taste it as I’m writing this! You get the savory flavor from the kielbasa. But you also get that slight sweetness from peppers, and sauteed onions.
  • We’ve had this meal in a variety of ways. Most often, we’ll serve it over rice which makes for hearty yet super-simple dinner. But, we’ve also served them in hot dog buns or sub rolls. Cauliflower rice and brown rice are also options. This recipe is really flexible.
  • Sticking to meal plan is all about having fast, nutritious, but satisfying meals around. This one certainly fits the bill. It’s so dependable your whole family will give it the thumbs up.

Ingredients

Fresh ingredients for kielbasa, peppers, and onions recipe: sausage, colorful bell peppers, garlic, and oil.
  • Smoked Sausage – any sausage will work here. We like kielbasa because it is so tasty and adds flavor to the whole dish, but andouille or chicken sausage could work as well.
  • Onion – white or yellow onions get slightly caramelized adding a mild sweetness to the dish.
  • Bell Peppers – we like red and orange peppers because they have a slight sweetness.
  • Garlic – we like fresh cloves more than ground garlic.
  • Olive Oil
  • Pepper – fresh black pepper is best.

How to Make Kielbasa, Peppers, and Onions

Slice the kielbasa into ½ inch pieces. Heat a pan on medium heat and cook the pieces for 2 minutes on each side. Take them out of the pan and set them aside.

Kielbasa slices browning evenly in a skillet, creating a perfect base for a sausage dish.

Add the olive oil, peppers, and onions to the pan and cook for 4 to 5 minutes or until tender.

Add the garlic and oregano and cook for 1 minute. Add the kielbasa to the pan and cook for 1-2 minutes or until heated through. Add salt and pepper to taste.

Red, orange, and yellow bell peppers sautéed with onions in a black nonstick skillet for a vibrant dish.

Serve as is or over rice. Enjoy!

Top Tip

Don’t overcook the peppers. Sautee them for about 5 minutes or until they are tender but not mushy. This is especially important if you plan to cook enough for leftovers.

Storage

Sometimes (if I remember) I’ll cook enough for leftovers which you can store in the fridge for up to 4 days. Reheat in a skillet on medium heat for a few minutes until warmed through.

If you use the microwave, heat it in 20 to 30 second intervals until it’s warmed through.

FAQ

Can I use a different type of sausage?

While I love kielbasa, maybe you want to switch it up and do something a bit different. So, try chicken sausage, andouille, or even chorizo for a Mexican spin.

Can I make this ahead of time?

If leftovers count, we’ve definitely cooked this meal ahead of time. It heats up very well.

Can I add other vegetables?

Oh yeah, you can totally make it your own. Summer squash, cabbage, baby bella mushrooms, green beans, or even thinly sliced carrots can go in this recipe.

  • 12 Oz Kielbasa
  • 1 Tbsp Olive Oil
  • 2 Bell Peppers Seeded and Sliced
  • 1 Medium Yellow Onion Sliced
  • 2 Garlic Cloves Minced
  • 1 Tsp Dried Oregano

Instructions
 

  • Slice the kielbasa into ½ inch pieces. Heat a medium pan on medium heat and cook the pieces for 2 minutes on each side. Take them out of the pan and set them aside.
