Kielbasa Pepper and Onions Recipe

Kielbasa, Peppers, and Onions - a tasty, 6 ingredient one-pan meal, perfect for busy weeknights. It's super flexible, so if your eating low carb, serve as is, or for a more hearty dinner, serve over rice, quinoa, or even in a hoagie. Yum!

Ingredients

  • 12 Oz Kielbasa
  • 1 Tbsp Olive Oil
  • 2 Bell Peppers Seeded and Sliced
  • 1 Medium Yellow Onion Sliced
  • 2 Garlic Cloves Minced
  • 1 Tsp Dried Oregano

Instructions

  • Slice the kielbasa into ½ inch pieces. Heat a medium pan on medium heat and cook the pieces for 2 minutes on each side. Take them out of the pan and set them aside.
  • Add the olive oil, peppers, and onions to the pan and cook for 4 to 5 minutes or until tender.
  • Add the garlic and oregano and cook for 1 minute.
  • Add the kielbasa to the pan and cook for 1-2 minutes or until heated through. Add salt and pepper to taste.
  • Serve as is or over rice. Enjoy!

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • To reheat, cook in a covered skillet over low heat until heated through.
