This egg roll in a bowl is a great year-round weeknight meal. It’s one of our go-to dinners! It’s the PERFECT quick, nutritious meal without the fuss. On top of that, it’s actually great for meal prepping for the week.

  • It’s endlessly customizable to your taste. Want to kick it up a notch with more heat, be my guest (chili oil or sriracha are my faves). Or, give it more crunch with wonton strips.
  • If you’re a planner, like yours truly, you’ll love this one. I like to make a double batch, serve it fresh on say, Monday, then again on Thursday.

Raw ground turkey, green onions, garlic, cabbage mix, soy sauce, vinegar, brown sugar, and ginger paste on counter.

How to Make Ground Turkey Egg Roll In A Bowl

In a large skillet, heat the oil over medium-high heat. Add the ground turkey and cook, breaking it up, until it is no longer pink.

Then add the garlic and ginger, and cook for 1 minute.

Add half of the diced green onion, cabbage, soy sauce, sesame oil, vinegar, and brown sugar. Stir and cook for 3-5 minutes, or until the cabbage is tender and softened.

Serve hot over white rice or cauliflower rice. Top with green onions and sesame seeds if desired. Enjoy!

Top Tip

Be sure to drain of excess liquid from the cooked turkey before adding seasonings and other ingredients.

I like the cabbage to have a bit of a crunch, so I add it towards the end of cooking so it’s nice a crisp when i serve it.

Storage

Allow it to cool completely before placing it in an airtight container and store in the fridge for up to 4 days.

Egg roll in a bowl actually keeps well in the freezer for 2 to 3 months if placed in a food storage bag or container. We’ve done this, and it still tastes great. To reheat, thaw overnight and gently warm it in a skillet.

Can egg roll in a bowl work with different protein?

Sure! Substitute ground turkey for ground turkey, shredded chicken, ground beef, ground pork, or shredded pork. This concept is a great way to use up leftovers. Vegetarians might try it with tofu.

What should I serve it with?

We love this dish with white rice, but it’ll work with quinoa or cauliflower rice, too. I think it’ll even work well served over roasted cubed sweet potatoes.

  • 1 Pd Ground Turkey

  • 10 Oz Shredded Cabbage or Coleslaw Mix
  • 4 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • 2 Tsp Rice Vinegar
  • 1 Tbsp Brown Sugar
