Scoop 1 cup of rice into each bowl. Slice the chicken thighs and place on top of the rice.
Spoon some cucumber salad, hummus, tzatziki sauce on top. Add the halved olives and garnish with feta cheese and fresh parsley. Enjoy!

If you want to store leftovers, first separate the chicken and rice from the fresh toppings, and place them in different containers. They’ll keep for up to 3 days.

Easy! The quickest way to do it is in the microwave, in 20 or 30 second intervals, until heated through. But, make sure you remove the fresh toppings first. Who wants warm cucumber tomato salad? Yuck!
We do it all the time. You can cook the chicken up to 3 days in advance if you plan on keeping it the fridge. Or, like us, you can double or triple the recipe and store it in freezer bags for up to 3 months. This saves us SO MUCH TIME!
