Ingredients
Most ingredients you need to make easy quesadillas, like tortillas, ground beef, and cheese, are already in your kitchen. You’ll learn how each ingredient makes these quesadillas so flavorful and satisfying.
- Ground beef – We like 88/12 or leaner.
- Taco seasoning – Yellow or white works great
- Shredded cheese
- Flour tortillas
- Optional toppings: sour cream, salsa, avocado, guacamole

Instructions
In a large pan, cook the ground beef over medium heat until it’s no longer pink about 5-7 minutes. Drain any excess fat.
Add the taco seasoning to the cooked beef and stir. Let it cook for 2-3 minutes until the meat is fully coated.
Lay one tortilla flat on a cutting board. Sprinkle some shredded cheese on one half of the tortilla. Add one or two spoonfuls of the cooked beef on top of the cheese.
Sprinkle a little more cheese on top of the meat.
Fold the tortilla in half so that the cheese and beef are covered.
Heat a non-stick pan over medium heat and lightly coat with oil. Place the folded quesadilla in the pan and cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
Remove the quesadilla from the pan, cut it into wedges, and serve with sour cream, salsa, or other desired toppings.

Layer cheese on both sides of the filling—it helps hold everything together when you cook, and more cheese is always a win.

Storing: Keep leftovers in an airtight container in the fridge—they’ll stay fresh and tasty for up to three days.
Reheating: For crispy edges, warm them in a skillet over medium-high heat for 2 to 3 minutes per side. Or cook them in the oven at 350 degrees for 10 to 15 minutes.
Freezing: Wrap each quesadilla in foil, freeze, and thank yourself later when you need a fast, no-fuss meal! Preheat to 375°F, wrap the frozen quesadilla in foil, and bake for 20-25 minutes until heated through.
