Why You’ll Love This Recipe…

  • We’ve made this recipe for just our family as well as dinner guests. Every time, it is a hit! I look at it like this: It’s comfort food with slightly less common ingredients, making it somewhat fancy!
  • This isn’t your average meatloaf—it’s a whole new level of delicious. Packed with tangy feta cheese, earthy oregano, and a bright pop of sun-dried tomatoes, every bite is like the closest thing to a Mediterranean getaway…almost. Just don’t be surprised when everyone asks for seconds!
  • So I’ve been gushing about how good it tastes, but that’s only one reason to love it. What I REALLY LOVE is that it comes together so easily. All you have to do is mix everything in a bowl, shape it, bake it, and you’re done. No complicated steps.
  • If you’re a make-ahead master, save this one right now! Prep the meatloaf the night before, stick it in the fridge, and bake it when you’re ready. How’s that for being prepared for din-din?

Ingredients

Our Greek-style meatloaf is all about bold, fresh, yet easy to find ingredients. Primarily you have ground beef, feta, and sun-dried tomatoes. Each ingredient brings a taste of the Mediterranean.

Ingredients for Mediterranean meatloaf arranged on a white surface, including ground beef, feta cheese, breadcrumbs, olives, sun-dried tomatoes, fresh parsley, oregano, garlic, and an egg.

Ground beef – For best results, I recommend high-quality ground beef from 85/15 to 90/10.
Breadcrumbs
– We used plain breadcrumbs but Italian breadcrumbs could work as well.

How to Make Greek Style Meatloaf

Preheat the oven to 350° degrees. Then, mix the breadcrumbs, egg, feta cheese, sun-dried tomatoes, kalamata olives, parsley, dill, garlic, oregano, salt, and ground beef in a big bowl. Stir until everything is just combined, but don’t mix too much. Let it sit for 5 minutes.

Put the meat mixture on a baking sheet with parchment paper. Shape it into a loaf.

Bake the meatloaf for 40-45 minutes or until the inside reaches 160 degrees. Let the meatloaf rest for 10 minutes before slicing and serving.

Top Tip

When combining the ingredients, mix gently. Overmixing can make your meatloaf tough, and nobody wants that.

Storage

Storing
Got leftovers? Pop the meatloaf in an airtight container and stash it in the fridge for up to 3 days. It’s perfect for quick lunches or an easy dinner later in the week!

Freezing
Want to save some for later? Wrap the meatloaf tightly in foil or plastic wrap, then freeze it for up to 3 months. It’s like having a delicious backup plan for busy nights.

Reheating
Reheat slices in the oven at 350°F for up to 10 minutes, or until they are warmed through.

FAQ

How do I keep it from drying out?

The BEST tip I can give you in terms keeping the meatloaf nice and moist is to use a food thermometer and take it out of the oven when it reaches 160 degrees.

How to Keep Greek-Style Meatloaf from Crumbling Apart?

Mix the ingredients gently but thoroughly to evenly distribute the egg and breadcrumbs. If your mixture feels too dry, add a splash of milk or olive oil to bring it all together. Finally, let the meatloaf rest for 5-10 minutes after baking—it helps it firm up and makes slicing easier!
