S'mores Popsicles

These S’mores Popsicles are like a summer campfire frozen on a stick, and I can’t get enough! Dreamy creamy chocolate, marshmallow fluff, and crunchy graham crackers join forces for a treat that’s quick, easy, and totally nostalgic.

Equipment

  • 1 Popsicle Mold

Ingredients

Chocolate Ice Cream

  • ¾ Cup Sugar
  • ¼ Cup Dutch Cocoa Powder
  • 1 ½ Cup 2% Milk
  • 1 ½ Cup Heavy Cream
  • 1 Tsp Vanilla Extract
  • ¼ Tsp Kosher Salt
  • 1 Graham Cracker Crumble Recipe
  • 1 Marshmallow Fluff Recipe

Instructions

  • Follow the instructions on how to make the Graham Cracker Crumble Recipe. Just don't bake it.
  • Follow the instructions for making the Marshmallow Fluff.
  • In a medium saucepan, sift the cocoa powder and sugar, then add the salt.
  • Whisk in the heavy cream. Heat the mixture on medium high heat for about 5 minutes or until the sugar has dissolved.
  • Add the 2% milk and the vanilla extract into the chocolate mixture. Place the mixture into the fridge for about 1 hour. This will help thicken the ice cream mixture.
  • Fill the molds about ¾ of the way, then top with some graham cracker crumbs.
  • Place the lid on the popsicle mold and add the sticks. Place in the freezer for about 4 hours.
  • Remove the popsicles from freezer and add the marshmallow fluff. Torch the fluff and serve immediately. Enjoy!

Notes

  • These will last in the freezer for up to 2 months. 
  • This recipe can easily be doubled. 
  • Have fun with adding the graham cracker crumble. We adding some at the bottom of the mold before adding the ice cream mixture. You can also fill the mold half way freeze slightly and add some crumble in the middle.
