Place 10 cookies in a zip-lock bag and crush them into small pieces with a rolling pin. Set them aside.
Add the remaining cookies to a food processor and blend into fine crumbs. Transfer them to a medium bowl and set it aside.
In another medium bowl, mix the softened cream cheese with the powdered sugar until smooth and well combined.
Stir the crushed cookies into the cream cheese mixture, then cover with plastic wrap and refrigerate for at least 2 hours.
Once chilled, scoop out about three tablespoons of the mixture and roll it in the cookie crumbs to form a ball. Place each ball on a baking sheet lined with parchment paper.
Break a pretzel stick in half and stick it into the ball to create the spider legs. Repeat this process with three additional pretzels to make a total of eight legs.
Melt the chocolate and transfer it to a sandwich bag. Snip off one corner, then use a tiny amount of chocolate to attach the candy eyes to each spider. Repeat until all the cheeseballs are decorated. Time to enjoy!
