First, cut the kielbasa into quarter-inch medallions. Heat a large skillet, and cook the kielbasa for 1 to 2 minutes per side. Remove them from the pan and set aside.
Using the oil from the kielbasa, cook the peas, carrots, and diced onion for about 5 minutes.
Add the ginger paste and minced garlic to the pan with the peas, carrots, and diced onions. Mix it in and cook for about a minute.
Add the day-old rice and soy sauce to the pan, and cook for 5 to 7 minutes.
Next, you’ll want to create a well in the center of the fried rice. Add the sesame oil, then add the whisked eggs, and cook for 1 to 2 minutes. Toss the egg and the rice together.
Add the cooked kielbasa sausage to the fried rice and mix it in. Garnish with some green onions, and enjoy!
