Preheat oven to 400 degrees.
Shred or cut the pulled pork into bite-size pieces.
Heat olive oil in a heavy skillet over medium heat until hot. Add the pork, cook, and stir until heated through and slightly crisped. About 5-7 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
Spread tortilla chips evenly on a baking sheet or in an oven-safe dish.
Sprinkle the pulled pork pieces and the cheese on top of the chips. Bake for 5 to 7 minutes until cheese has melted. Watch closely to avoid burning.
Serve hot, topped with sour cream, jalapeño slices, lime wedges, ciltrano or any of your favorite toppings. Enjoy!
