Easy Kielbasa Quesadilla Recipe

When life gives me kielbasa and tortillas, I make Easy Kielbasa Quesadillas. Because why not? These quesadillas are smoky, cheesy, and ridiculously simple to throw together.

Ingredients

  • 12 Oz Kielbasa Sliced
  • 2 Tbsp Taco Seasoning
  • 2 Cups Mexican Shredded Cheese
  • 4 Large Flour Tortilla
  • Sour Cream Optional
  • Salsa Optional

Instructions

  • Slice the kielbasa into ½ inch pieces. Cook on medium heat for 2 minutes per side.
  • Add the taco seasoning to the kielbasa and stir until it’s well-mixed. Let it cook for 2 minutes until the meat is fully coated.
  • Lay one tortilla flat on a cutting board. Sprinkle some shredded cheese on one half of the tortilla. Add some kielbasa pieces on top of the cheese.
  • Sprinkle a little more cheese on top of the meat.
  • Fold the tortilla in half so that the cheese and kielbasa are covered.
  • Heat a non-stick pan over medium heat and lightly coat with oil. Place the folded quesadilla in the pan and cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
  • Remove the quesadilla from the pan, cut it into wedges, and serve with sour cream, salsa, or other desired toppings. Enjoy!

Notes

  • Wrap leftovers in aluminum foil and store in the fridge for up to 3 days. 
  • You can also wrap them in aluminum foil and put them in a freezer bag for up to 2 months in the freezer. 
  • Reheat in a 350-degree oven for 5-8 minutes.
