In a large pan, cook the ground beef over medium heat for 5-7 minutes until it’s no longer pink. Drain off any excess fat.
Add the taco seasoning to the beef and stir it in. Cook for 2-3 more minutes until the meat is fully covered with seasoning.
Wrap the tortillas in damp paper towels and microwave them for 20-30 seconds to warm them up. Set them aside.
Place a tortilla on a large cutting board. Put ¼ cup of rice a little below the middle of the tortilla. Then add ⅓ cup of beef, black beans, tomato, cheese, and lettuce (if you want).
Fold the bottom of the tortilla up over the filling, then fold the sides in. Roll it up tightly, and if you want, wrap it in parchment paper to hold it together.
Serve with sour cream and salsa. Enjoy!
