Beef Burritos

Who doesn’t love a good burrito? These Easy Ground Beef Burritos are here to save the day (and your dinner plans). They’re loaded with flavor, super customizable, and way easier (and cheaper) than hitting the drive-thru.

Ingredients

  • 1 Lb Ground Beef
  • 2 Tbsp Taco Seasoning
  • 1 Cup White Rice Cooked
  • 1 Cup Canned Black Beans Drained and Rinsed
  • 1 Cup Mexican Shredded Cheese
  • ½ Cup Tomatoes Diced
  • 4 Extra Large Flour Tortillas
  • Shredded Lettuce Optional
  • Sour Cream Optional

Instructions

  • In a large pan, cook the ground beef over medium heat for 5-7 minutes until it’s no longer pink. Drain off any excess fat.
  • Add the taco seasoning to the beef and stir it in. Cook for 2-3 more minutes until the meat is fully covered with seasoning.
  • Wrap the tortillas in damp paper towels and microwave them for 20-30 seconds to warm them up. Set them aside.
  • Place a tortilla on a large cutting board. Put ¼ cup of rice a little below the middle of the tortilla. Then add ⅓ cup of beef, black beans, tomato, cheese, and lettuce (if you want).
  • Fold the bottom of the tortilla up over the filling, then fold the sides in. Roll it up tightly, and if you want, wrap it in parchment paper to hold it together.
  • Serve with sour cream and salsa. Enjoy!

Notes

  • To store burritos, place them in an airtight container and refrigerate for up to five days.
  • To freeze burritos, wrap each burrito individually in plastic wrap or parchment paper, then place them in a freezer bag. Freeze for up to three months.
  • To reheat burritos, preheat the oven to 350 degrees, wrap them in foil, and bake them for 7-10 minutes, flipping halfway.
