Greek Cucumber Tomato Salad Recipe

Greek Cucumber Tomato Salad is one of my favorite lettuce-free salads. It's refreshing. It's healthy, and mmm, so delicious with vibrant tomatoes, light and crunchy cucumbers, bold red onions, and tangy red wine vinegar.

Ingredients

  • 1 English Cucumber
  • ¾ Cup Cherry Tomatoes Halved
  • ¼ Cup Red Onion Diced
  • ¼ Cup Feta Crumbled
  • ¼ Cup Fresh Parsley Chopped
  • 1 Tbsp Red Wine Vinegar
  • ½ Tsp Kosher Salt
  • ¼ Tsp Fresh Ground Black Pepper

Instructions

  • Cut the cucumber into ¼ inch pieces and put it in a medium bowl.
  • Prepare the tomatoes and red onion. Add them to the bowl with the cucumber.
  • Add the remaining ingredients into the bowl and mix until thoroughly combined. Add salt and pepper to taste. Enjoy!

Notes

  • Store leftovers in an air-tight container in the fridge for up to 4 days. 
  • You can easily double this batch. 
  • If you can't find cherry tomatoes, you can use Roma; just chop them in a similar size to the cucumber.
