Line a baking sheet with parchment paper and set it aside.
Place ½ cup of white chocolate chips in a microwave-safe bowl. Microwave on 50% power for 1 minute, then continue microwaving in 15-second intervals, stirring after each one, until completely melted. Transfer the melted chocolate to a sandwich bag and snip off one corner.
Add a small amount of melted chocolate to the tip of a pretzel stick and place it on the prepared baking sheet to hold it in place. Gently squeeze the melted chocolate back and forth over the pretzel stick to form a tree.
Add colorful sprinkles and a star while the chocolate is still wet.
Melt the remaining ½ cup of white chocolate, stir in green food coloring, and transfer it to a sandwich bag with one corner snipped. Repeat the process to make green trees.
Let the trees sit at room temperature for about 10 minutes, or until the chocolate has set. Enjoy!
