Ingredients

  • 1 Lb Ground Beef
  • 1 Onion Finely Chopped
  • 2 Garlic Cloves Minced
  • 2 Tbsp Flour
  • 2 Tbsp Tomato Paste
  • 1 Tbsp Worcestershire Sauce
  • 1 Cup Beef Broth
  • 1 Tsp Dried Thyme
  • 1 Tsp Dried Parsley
  • Cup Frozen Peas and Carrots
  • Cup Frozen Corn
  • 2 Cups Tater Tots
  • 1 Cup Shredded Cheddar Cheese

Instructions

  • Cook the ground beef in a pan over medium heat until it's no longer pink, about 5-7 minutes. Drain the fat, remove the meat from the pan, and set it aside.
  • In the same pan, cook the onions for 4 minutes until soft. Then add the garlic and cook for 1 more minute.
  • Add the meat back and mix with the onion mixture. Sprinkle the flour and cook for 2 minutes.
  • Add the tomato paste, Worcestershire sauce, broth, thyme, and parsley. Cook for 10 minutes or until the mixture has thickened, stirring occasionally. Add salt and pepper to taste.
  • Add the frozen peas, carrots, and corn. Stir to combine.
  • Pour the mixture into a baking dish. Top with shredded cheese, then add the tater tots. Bake at 400 degrees for 20-25 minutes. Allow to cool slightly and enjoy.

Notes

  • Store leftovers in the fridge for 3-5 days and cover with foil or plastic wrap.
  • Reheat in the oven at 350 degrees for about 10 minutes or until the hotdish is heated through.
