Cook the ground beef in a pan over medium heat until it's no longer pink, about 5-7 minutes. Drain the fat, remove the meat from the pan, and set it aside.
In the same pan, cook the onions for 4 minutes until soft. Then add the garlic and cook for 1 more minute.
Add the meat back and mix with the onion mixture. Sprinkle the flour and cook for 2 minutes.
Add the tomato paste, Worcestershire sauce, broth, thyme, and parsley. Cook for 10 minutes or until the mixture has thickened, stirring occasionally. Add salt and pepper to taste.
Add the frozen peas, carrots, and corn. Stir to combine.
Pour the mixture into a baking dish. Top with shredded cheese, then add the tater tots. Bake at 400 degrees for 20-25 minutes. Allow to cool slightly and enjoy.
