Air Fryer Southwestern Quesadilla Recipe

These air fryer southwest quesadillas are easy and delicious, stuffed with chicken, cheese, and veggies. They take less than 15 minutes to make.

Ingredients

  • 4 Flour Tortillas
  • 1 Cup Shredded Chicken Breast
  • 1 Cup Monterey Jack Cheese Shredded
  • ½ Cup Black Beans Rinsed and drained
  • ½ Cup Corn Rinsed and drained
  • ½ Cup Fajita Peppers See recipe

Instructions

  • Preheat the air fryer to 350 degrees.
  • Arrange some cheese on half of one tortilla. Top with the shredded chicken. Then add some fajita peppers, black beans, and corn. Finally, add some more cheese on top and fold over. Repeat until you have made the rest of the quesadillas.
  • Place 2 quesadillas in the air fryer basket and brush olive oil on top.
  • Cook for 4 minutes. Carefully flip and brush some more olive oil on top and cook for another 4 minutes or until the cheese is melted.
  • Continue until all quesadillas are cooked. Cut them in half and enjoy with your favorite sauce.

Notes

  • Depending on the size of your air fryer, you will need to cook this in batches. We were able to fit 2 quesadillas and had to cook 2 batches. 
  • You can use cooking spray as well. But the oil gets a nice golden brown color. 
  • We found that sometimes the tortilla can lift away from the fillings as it's cooking at the very beginning. If this happens, simply push it back down with a spatula and continue cooking.
  • Quesadillas will keep in an airtight container for up to three days.
  • Reheat any leftovers at 350 degrees for 2-3 minutes.
