Preheat a nonstick skillet for 2 minutes over medium heat. Cook the Chorizo for 6 to 8 minutes, crumbling with a spoon while cooking. Scoop the cooked chorizo on a plate lined with a paper towel to drain any excess oil.
Preheat the air fryer to 375 degrees.
Unfold the pastry sheet on the work surface lightly dusted with flour. Roll the pastry sheet into an 11x10-inch rectangle. Cut into 4 equal squares.
Using a butter knife, score a border on each square.
Spray the basket with cooking spray and cook 1 piece for 3 minutes.
After the 3 minutes, lightly push down the center to help create a pocket. Add 1 egg, cheese, and chorizo. Cook for another 3 minutes.
Continue until all pieces are cooked. Once done, top with the avocado, jalapeno, and sour cream. Enjoy!
