Ingredients

  • 1 Puff Pastry Sheet
  • 4 Large Eggs
  • 4 Oz Ground Chorizo
  • 4 Oz Oaxaca Cheese Shredded

Optional Toppings

  • Sliced Avocado
  • Cilantro
  • Pickled Jalapenos
  • Sour Cream

Instructions

  • Preheat a nonstick skillet for 2 minutes over medium heat. Cook the Chorizo for 6 to 8 minutes, crumbling with a spoon while cooking. Scoop the cooked chorizo on a plate lined with a paper towel to drain any excess oil.
  • Preheat the air fryer to 375 degrees.
  • Unfold the pastry sheet on the work surface lightly dusted with flour. Roll the pastry sheet into an 11x10-inch rectangle. Cut into 4 equal squares.
  • Using a butter knife, score a border on each square.
  • Spray the basket with cooking spray and cook 1 piece for 3 minutes.
  • After the 3 minutes, lightly push down the center to help create a pocket. Add 1 egg, cheese, and chorizo. Cook for another 3 minutes.
  • Continue until all pieces are cooked. Once done, top with the avocado, jalapeno, and sour cream. Enjoy!

Notes

  • Since Oaxaca cheese is soft, you want to freeze it for about 20 minutes before shredding. 
  • Scoring the puff pastry will help create a pocket for the egg and toppings. But also prevents it from puffing up too high. 
  • You will have to cook this in batches. 
  • We don't recommend storing these since it has an egg. You can make as much or as little as you need.
