Elote Waffle Fries Recipe

Classic waffle fries covered with queso fresco, chorizo, corn, sour cream, mayo, and cilantro. These fries are delicious and easy to make for a crowd.

  • 1 Air Fryer optional

Ingredients

  • 4 Ears Sweet Corn
  • 4 Oz Cotija Cheese Crumbled
  • 9 Oz Chorizo Sausage
  • 24 Oz Frozen Waffle Fries
  • 2 Tbsp Cilantro Minced
  • 1/4 Cup Mayo
  • 1/4 Cup Sour Cream
  • 1/2 Tsp Chili Powder
  • 2 Tsp Lime Juice
  • 1/4 Tsp Salt

Instructions

  • Remove corn from the husks and place them on a baking sheet. Broil for 10-15 minutes or until kernels are slightly darkened on all sides. Make sure to rotate the corn a few times during the cooking time to ensure even charring.
  • Cook the chorizo in a medium pan on medium-high heat until the color is a dull red or light brown. It should look like cooked ground beef. About 7-9 minutes. Put the cooked chorizo on a plate lined with a paper towel.
  • In a medium bowl mix the mayo, sour cream, chili powder, lime juice and salt to taste. Set aside.
  • To cut the corn off the cob you can use a bundt pan. Place the cob on the center hole and cut down. The kernels will fall into the pan instead of all over the counter. Add the corn into the sauce and mix to combine.
  • Preheat the air fryer to 400 degrees. Cook in batches, add the waffle fries and cook for 10 minutes. Shake the basket halfway.
  • Once the fries are done, top them with the corn mixture, chorizo, cotija cheese, and cilantro. Enjoy!

Notes

  • You can broil the corn in advance, cut the kernels off and store it in the fridge for up to a day. 
  • If you don’t have a bundt pan you can invert a small bowl into a large bowl. Put the cob on top of the smaller bowl and cut down. The kernels will fall into the larger bowl.
  • If you have a larger air fryer you may not have to cook the fries in batches. Just make sure to still shake the basket halfway through the cooking time.
  • Store corn mixture and chorizo in the fridge for up to 3 days in an airtight container.
  • You can reheat the fries in the air fryer at 400 degrees for 3-5 minutes.
